Crack Breakfast Casserole

An easy and delicious breakfast casserole perfect for feeding a crowd, featuring sausage, bacon, hash browns, and cheese.

  • 1 pound pork sausage (or turkey sausage)
  • 6 strips bacon (or vegetarian sausage)
  • 8 ounces softened cream cheese
  • 1 cup sour cream (or Greek yogurt)
  • 1 cup whole milk (or non-dairy milk)
  • 8 large eggs
  • 2 cups shredded cheddar cheese
  • 30 ounces frozen shredded hash browns, thawed and drained
  • 1 packet ranch seasoning mix
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Optional: 1 cup bell peppers, 1 cup spinach, 1 cup mushrooms

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a 9×13-inch baking dish.
  2. Cook sausage and bacon in a skillet until browned. Drain fat.
  3. In a mixing bowl, blend cream cheese and sour cream until smooth. Stir in milk, eggs, ranch seasoning, onion powder, garlic powder, salt, and pepper.
  4. Add cooked meats, hash browns, and 1 cup cheddar cheese to the egg mixture. Combine gently.
  5. Pour mixture into the prepared baking dish. Top with remaining cheese.
  6. Cover with foil and bake for 50-60 minutes.
  7. Remove foil and bake for an additional 8-10 minutes until bubbly and golden.
  8. Cool for a few minutes before cutting and serving.
