  • 2 lb boneless skinless chicken thighs
  • 1 oz package ranch seasoning mix
  • 16 oz cream cheese, softened
  • 1 1/2 cups shredded cheddar cheese
  • 8 slices bacon, cooked and drained
  • 1/2 cup sliced green onions

Instructions

  1. Place chicken thighs in the slow cooker. Sprinkle ranch seasoning mix over chicken. Top with dollops of softened cream cheese.
  2. Cover and cook on LOW for 7 hours without opening the lid.
  3. Shred chicken in the slow cooker with two forks. Stir in cream cheese until combined. Mix in cooked bacon.
  4. Spread chicken mixture evenly in the slow cooker. Sprinkle cheddar cheese over the top.
  5. Cover and let sit for 10 minutes for cheese to melt.
  6. Serve over rice, a baked potato, or sandwich rolls. Garnish with green onions.
