Loaded Beef Taco Casserole

A delicious bowl of crave-worthy ground beef recipe with crispy potato chunks, black beans, guacamole, and pico de gallo.

A flavorful and satisfying ground beef and potato casserole with Mexican-inspired flavors, perfect for a weeknight dinner.

  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 2 tablespoons spicy taco seasoning
  • 1 cup Pace Chunky Salsa
  • 1 tablespoon lemon juice
  • 2 large potatoes, diced
  • 2 tablespoons olive oil
  • 1 can black beans, drained and rinsed
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon Aleppo pepper
  • 1 teaspoon salt
  • 1 large egg yolk
  • 1 tablespoon chipotle in adobo
  • 2 medium avocados, mashed
  • 1 medium tomato, diced
  • 1 small shallot, diced
  • 1 small jalapeรฑo, diced (optional)
  • 1 packet guacamole seasoning
  • 1 cup pico de gallo

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and diced onion. Cook until beef is browned, about 15-20 minutes, stirring occasionally.
  2. Stir in taco seasoning, salsa, and lemon juice. Simmer for 3-5 minutes until the mixture thickens slightly.
  3. Preheat oven to 425ยฐF. Toss diced potatoes with olive oil and taco seasoning. Spread on a baking sheet and bake for 30 minutes, or until crispy and golden brown, stirring halfway through.
  4. Combine black beans, onion powder, garlic powder, cumin, Aleppo pepper, and salt in a saucepan. Cook over medium heat for 15 minutes to heat through and blend flavors.
  5. In a blender, combine egg yolk, garlic, lemon juice, chipotle in adobo, sugar, and salt. With the blender running, slowly drizzle in olive oil until a creamy aioli forms.
  6. Mash ripe avocados in a mixing bowl. Stir in diced tomato, shallot, jalapeรฑo, lemon juice, and guacamole seasoning.
  7. Combine chopped tomatoes, shallot, and jalapeรฑo in a bowl with lime juice, salt, and cilantro. Let sit for a few minutes.
  8. Layer crispy potatoes and seasoned ground beef in bowls. Top with black beans, guacamole, pico de gallo, and desired toppings.

Notes

  • For the aioli, you can substitute mayonnaise for the egg yolk if preferred.
  • Adjust the spice level of the taco seasoning and Aleppo pepper to your preference.
  • Feel free to add shredded cheese or sour cream as toppings.
