Instructions

  1. Preheat your oven to 425°F (220°C). Scrub the baby potatoes. Cut them in half or quarters if large.
  2. Boil the potatoes in salted water for 10–15 minutes until fork-tender. Drain and let them steam dry for a few minutes.
  3. Return potatoes to the pot. Add olive oil, rosemary, salt, and pepper. Toss to coat evenly.
  4. Spread potatoes in a single layer on a baking sheet. Roast for 25–30 minutes, turning halfway, until golden and crispy.
  5. Remove from oven, let cool slightly, and serve.
