Creamy Chicken Parmesan Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 cup heavy cream
  • 1 cup cooked pasta
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
  5. Return chicken to the pot. Stir in heavy cream and cooked pasta.
  6. Simmer for 5 minutes, or until heated through.
  7. Stir in Parmesan cheese until melted.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh parsley before serving.

Notes

  • For a thicker soup, you can add a slurry of 2 tablespoons cornstarch mixed with 2 tablespoons cold water in step 5.
  • You can use leftover cooked chicken or rotisserie chicken for a quicker preparation.
  • Feel free to add other vegetables like spinach or peas.
