Creamy Chicken Thighs with Spinach

Juicy seared chicken thighs in a rich, garlicky spinach cream sauce. This one-pan meal is flavorful and ideal for weeknight dinners.

Ingredients

  • 4 boneless, skinless chicken thighs
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 4 cups baby spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/3 cup grated parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Optional: red pepper flakes for heat

Instructions

  1. Season chicken thighs with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium heat. Sear chicken for 5–6 minutes per side until golden and cooked through. Remove and set aside.
  3. In the same skillet, sauté garlic for 30 seconds until fragrant.
  4. Add baby spinach and cook until wilted, about 2–3 minutes.
  5. Pour in cream and chicken broth, stir, and simmer for 3–4 minutes to thicken slightly.
  6. Stir in parmesan cheese until melted and smooth.
  7. Return chicken to the skillet and spoon sauce over the top. Simmer 2–3 minutes more.
  8. Serve warm with pasta, rice, or crusty bread.

  • Add-ins: Mushrooms, sun-dried tomatoes, or kale work well.
  • Dairy-free version: Use coconut cream or dairy-free alternatives.
