An easy and quick creamy chicken parmesan pasta recipe perfect for a weeknight dinner.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup marinara sauce
  • 2 cups uncooked pasta (e.g., penne or fusilli)
  • 1 teaspoon Italian seasoning
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil, for garnish (optional)

Instructions

  1. In a large pot over medium heat, add the olive oil.
  2. Add the diced chicken and sautรฉ until itโ€™s browned and cooked through, about 5-7 minutes.
  3. Stir in the chopped onion and minced garlic. Cook for an additional 2-3 minutes until the onion is translucent.
  4. Add the chicken broth to the pot, bringing the mixture to a boil.
  5. Stir in the marinara sauce and Italian seasoning, allowing it to simmer for 5 minutes.
  6. Add the uncooked pasta to the pot and cook according to the package instructions, usually around 8-10 minutes.
  7. Once the pasta is cooked, reduce the heat to low and stir in the heavy cream and grated Parmesan cheese, mixing until smooth.
  8. Add salt and pepper as needed, adjusting the flavors to your liking.
  9. If desired, top with fresh basil for a burst of color and flavor before serving.
