Cook pasta according to package directions. Drain and set aside.
Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
Add minced garlic to the same skillet and cook for 1 minute until fragrant. Do not let it burn.
Pour in heavy cream and chicken broth. Bring the mixture to a simmer, stirring occasionally.
Reduce heat to low. Stir in the Parmesan cheese until the sauce is smooth.
Return the cooked chicken to the skillet. Season with salt and pepper.
Add the cooked pasta to the skillet and toss everything together until the pasta is coated in the sauce.
Serve immediately, garnished with fresh parsley.
Notes
For a thicker sauce, simmer the cream and broth mixture for an extra 2-3 minutes before adding the cheese.
You can substitute chicken broth with vegetable broth for a different flavor profile.
