A quick and easy recipe for baked smashed garlic parmesan potatoes, perfect for busy weeknights. Crispy on the outside, creamy on the inside, and packed with flavor.

  • 1 pound baby potatoes
  • 4 cloves fresh garlic, minced
  • 1 cup freshly grated Parmesan cheese
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh herbs (rosemary or thyme), chopped
  • Salt and pepper to taste

Instructions

  1. Wash and boil the baby potatoes in salted water for 15-20 minutes until fork-tender. Drain and let cool slightly.
  2. Preheat your oven to 425ยฐF (220ยฐC) and line a baking sheet with parchment paper.
  3. Gently smash each potato with a masher or fork until flattened but intact.
  4. In a bowl, combine minced garlic, olive oil, salt, pepper, and half of the Parmesan cheese. Drizzle over the smashed potatoes.
  5. Sprinkle the remaining Parmesan cheese and chopped herbs on top.
  6. Bake for 25-30 minutes until crispy and golden brown.
