Creamy Gnocchi with Spinach and Feta

A quick and easy one-pot gnocchi dish with spinach and feta cheese.

Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 pound gnocchi
  • 2 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 5 ounces fresh spinach
  • 1/2 cup crumbled feta cheese
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant, about 1 minute.
  2. Add gnocchi and broth to the skillet. Bring to a simmer and cook according to package directions, or until gnocchi are tender.
  3. Stir in heavy cream and spinach. Cook until spinach is wilted, about 2-3 minutes.
  4. Remove from heat and stir in feta cheese. Season with salt and pepper to taste.
  5. Serve immediately.

Notes

  • For a vegetarian option, use vegetable broth.
  • Add cooked chicken or shrimp for a heartier meal.
