Creamy Smothered Chicken and Rice Recipe

A simple and delicious stovetop recipe for creamy smothered chicken served over fluffy rice.

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 ยฝ cups whole milk
  • ยฝ cup shredded cheddar cheese
  • ยฝ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon thyme
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Cook the rice in boiling chicken broth until tender; set aside.
  3. Sear seasoned chicken in olive oil until golden brown and cooked through; remove from skillet.
  4. Create the creamy sauce by cooking butter and whisking in flour; gradually add milk and broth until thickened.
  5. Stir in seasonings and cheeses until melted.
  6. Return chicken to the skillet; spoon sauce over it and simmer briefly.
  7. Serve over rice garnished with parsley.

Notes

  • For extra flavor, you can add a pinch of cayenne pepper to the sauce.
  • If the sauce is too thick, add a little more milk or broth to reach your desired consistency.
