  • 2 large chicken breasts, halved horizontally
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon all-purpose flour
  • 2 cups cooked white rice
  • Fresh parsley, chopped for garnish

Instructions

  1. Season chicken pieces with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken for 4-5 minutes per side until golden brown. Remove chicken and set aside.
  4. Reduce heat to medium. Add onion to the skillet and cook until softened, about 3 minutes.
  5. Add garlic and cook for 1 minute more until fragrant.
  6. Sprinkle flour over the onions and stir for 1 minute.
  7. Gradually whisk in chicken broth, scraping up any browned bits from the bottom of the pan.
  8. Stir in heavy cream and Parmesan cheese. Bring the sauce to a simmer.
  9. Return the chicken to the skillet. Cover and cook for 8-10 minutes, or until the chicken is cooked through and the sauce has thickened.
  10. Serve the smothered chicken and sauce over cooked rice. Garnish with fresh parsley.

Notes

  • For a thicker sauce, let it simmer uncovered for a few extra minutes.
  • You can use chicken thighs instead of breasts if you prefer dark meat.
