Creamy Smothered Chicken and Rice

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper and sear for 6-7 minutes per side until golden brown. Remove chicken and set aside.
  2. In the same skillet, add chopped onion and minced garlic. Sauté until onion is translucent and garlic is fragrant, about 2-3 minutes.
  3. Stir in white rice to coat it in oil and absorb flavors. Pour in chicken broth and bring to a gentle simmer.
  4. Return seared chicken to the skillet, cover, and cook on low heat for 20 minutes.
  5. Pour in heavy cream, stir to combine, and cook for an additional 5 minutes until the sauce thickens.
  6. Garnish with freshly chopped parsley before serving.
