Creamy Tomato Basil Pasta

Ingredients

  • 1 pound pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Stir in crushed tomatoes, bring to a simmer, and cook for 10 minutes.
  5. Reduce heat to low and stir in heavy cream and Parmesan cheese until combined and heated through.
  6. Add cooked pasta and basil to the sauce. Toss to coat.
  7. Season with salt and pepper to taste.

Notes

  • For a vegan option, use full-fat coconut milk instead of heavy cream and nutritional yeast instead of Parmesan cheese.
  • Add cooked chicken or shrimp for a heartier meal.
