Creamy Tuscan Salmon (Comfort)

A simple, family-friendly recipe for creamy Tuscan salmon made quickly in one skillet, perfect for a weeknight dinner.

  • 1 pound fresh salmon cut into 4 pieces
  • Salt & pepper to taste
  • 1/4 teaspoon garlic powder
  • Flour for dredging
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 cup chicken broth or dry white wine
  • 1 teaspoon lemon juice
  • 1/4 cup sun-dried tomatoes
  • 1 cup heavy/whipping cream
  • 12 cups packed fresh baby spinach
  • 1 tablespoon fresh basil sliced thin (optional)
  • Freshly grated parmesan cheese (optional)

Instructions

  1. Season the salmon pieces with salt, pepper, and garlic powder. Dredge the seasoned salmon in flour.
  2. Heat the olive oil and butter in a skillet over medium-high heat. Add the salmon and cook for 3-4 minutes per side until a crust forms. Remove the salmon and set it aside.
  3. Add the chicken broth, lemon juice, and sun-dried tomatoes to the pan. Let the mixture bubble for two minutes.
  4. Stir in the heavy cream and cook for a couple more minutes.
  5. Reduce the heat to medium-low. Add the spinach and let it wilt for about 30 seconds. Return the salmon to the skillet. Cook for a few minutes until the salmon is cooked through and the sauce thickens slightly.
  6. Serve the salmon topped with fresh basil and parmesan cheese, if you choose to use them.

Notes

  • For the sun-dried tomatoes, use the oil-packed variety, drained, for the best flavor.
  • Do not overcook the salmon in the initial searing step; it finishes cooking in the sauce.
