  • 2 pounds baby potatoes
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ยฝ teaspoon black pepper
  • Fresh parsley, chopped

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. Wash and scrub potatoes. Halve larger ones.
  3. In a bowl, mix melted butter, minced garlic, thyme, salt, and pepper.
  4. Add potatoes to the bowl and toss to coat evenly.
  5. Spread potatoes in a single layer on a parchment-lined baking sheet.
  6. Bake for 35-40 minutes until tender and crispy.
  7. Garnish with fresh parsley.
  8. Serve hot.
