- 2 lbs potatoes, peeled and diced
- 1 cup frozen corn
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/4 cup butter, melted
- 1/4 cup chopped onion
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the diced potatoes, corn, onion, salt, and pepper.
- In a separate bowl, whisk together the milk and melted butter.
- Pour the milk mixture over the potato mixture and stir to combine.
- Transfer the mixture to a greased 9×13 inch baking dish.
- Cover the dish with foil and bake for 45 minutes.
- Remove the foil, sprinkle the cheddar cheese over the top.
- Bake for another 15-20 minutes, or until the potatoes are tender and the cheese is melted and bubbly.
- Let it rest for a few minutes before serving.
Notes
- For extra crispiness, you can broil the dish for the last 2-3 minutes, watching carefully to prevent burning.
