Cucumber Salad Sandwiches

Simple and refreshing sandwiches with a creamy cucumber salad filling.

Ingredients

  • 8 slices bread
  • 1 cup thinly sliced cucumber
  • 1/4 cup mayonnaise
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. In a medium bowl, combine the sliced cucumber, mayonnaise, dill, and lemon juice.
  2. Season with salt and pepper. Stir gently to combine.
  3. Spread the cucumber salad mixture evenly over 4 slices of bread.
  4. Top with the remaining 4 slices of bread.
  5. Cut sandwiches in half if desired.

Notes

  • For a tangier flavor, use Greek yogurt instead of half the mayonnaise.
  • Add a pinch of garlic powder for extra flavor.
  • Chill the cucumber slices before making the salad for a cooler sandwich.
