Ingredients

  • 2 cucumbers, thinly sliced
  • 1/4 cup creamy peanut butter
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon chili garlic sauce (or to taste)
  • 1 teaspoon honey or maple syrup
  • 1 clove garlic, minced
  • 1/4 cup water, or more as needed
  • Optional garnishes: chopped peanuts, sesame seeds, chopped cilantro

Instructions

  1. Combine peanut butter, soy sauce, rice vinegar, sesame oil, chili garlic sauce, honey, and minced garlic in a bowl.
  2. Whisk in water until the sauce reaches your desired consistency. Add more water if it’s too thick.
  3. Add the sliced cucumbers to the bowl with the sauce.
  4. Toss gently to coat the cucumbers evenly.
  5. Garnish with chopped peanuts, sesame seeds, or cilantro if desired.
  6. Serve immediately or chill for later.

Notes

  • Adjust the chili garlic sauce to control the spice level.
  • For a thicker sauce, use less water.
  • This dish can be made ahead of time and stored in the refrigerator.
