  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a standard loaf pan.
  2. In a large bowl, mix the mashed bananas, melted butter, granulated sugar, egg, and vanilla extract until combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
  5. In a small bowl, mix the brown sugar and cinnamon for the swirl.
  6. Pour half of the batter into the prepared loaf pan. Sprinkle the cinnamon-sugar mixture evenly over the batter. Top with the remaining batter.
  7. Use a knife to gently swirl the cinnamon mixture through the batter a few times.
  8. Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before removing it to a wire rack to cool completely.

Notes

  • If you do not have an oven, this recipe can be adapted for a microwave if you use a microwave-safe loaf pan and adjust cooking time significantly.
  • Use bananas that are heavily spotted for the best flavor and moisture.
