  • 4 cups frozen shredded hash browns, thawed and squeezed dry
  • 2 tablespoons unsalted butter, melted
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 cup shredded cheddar cheese
  • 0.5 cup cooked and crumbled breakfast sausage or bacon (optional)
  • 0.5 cup diced bell pepper
  • 0.25 cup chopped green onions
  • 4 large eggs
  • 0.25 teaspoon paprika
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 425°F (220°C). Grease a 12-inch ovenproof skillet or pizza pan.
  2. In a bowl, combine hash browns, melted butter, salt, and pepper. Mix well.
  3. Press the hash brown mixture into the prepared pan, forming an even layer with raised edges.
  4. Bake the crust for 20-25 minutes, until golden brown and crisp.
  5. Remove from oven. Top the crust evenly with cheddar cheese, sausage/bacon (if using), bell pepper, and green onions.
  6. Create four shallow wells in the toppings for the eggs.
  7. Crack one egg into each well. Sprinkle with paprika, salt, and pepper.
  8. Bake for 10-12 minutes, until egg whites are set.
  9. Cool for 3 minutes, then slice and serve.

Notes

  • Squeeze hash browns very dry for a crisp crust.
  • Use plant-based sausage or omit meat for a vegetarian option.
