Cheesy Ground Beef Rice Casserole

A delicious slice of cheesy ground beef rice casserole, topped with melted cheddar cheese and fresh parsley.

  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 1 cup bell peppers, diced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups frozen mixed vegetables
  • 1.5 cups shredded cheddar cheese
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a large baking dish.
  2. In a skillet over medium heat, sautรฉ chopped onions for 3-5 minutes until translucent. Add diced bell peppers and cook for another minute.
  3. Add ground beef to the skillet and cook until browned (5-7 minutes). Drain excess fat.
  4. Stir in canned tomatoes, salt, pepper, garlic powder, and Italian seasoning. Simmer for 3 minutes.
  5. Mix in frozen mixed vegetables and heat through for 3-4 minutes.
  6. Layer half the meat mixture in the baking dish, sprinkle with half the cheese, add remaining meat mixture, then top with the rest of the cheese.
  7. Bake for 25-30 minutes until bubbly and golden brown.

Notes

  • This casserole is a great make-ahead meal.
  • Feel free to add other vegetables like corn or peas.
