  • 2 pounds Yukon Gold potatoes
  • 1/4 cup unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves fresh garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Wash and chop the Yukon Gold potatoes into even, bite-sized pieces.
  3. In a large mixing bowl, combine olive oil, melted butter, minced garlic, Italian seasoning, salt, and pepper.
  4. Toss the chopped potatoes in the seasoning mixture.
  5. Sprinkle the grated Parmesan cheese over the potatoes, tossing again.
  6. Line a baking sheet with parchment paper and spread the potatoes in a single layer.
  7. Place the baking sheet in the oven and bake for 25-30 minutes, or until golden brown and tender.
