  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/4 cup lemon juice
  • 1/4 cup heavy cream
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cut chicken breasts in half horizontally to make four thin cutlets.
  2. Heat olive oil in a skillet over medium heat.
  3. Season chicken with salt and pepper.
  4. Cook chicken for 4-5 minutes per side until browned and cooked through. Remove chicken from the skillet and set aside.
  5. Reduce heat to low. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  6. Pour in lemon juice and scrape up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  7. Stir in heavy cream and dried oregano. Cook until the sauce thickens slightly, about 2 minutes.
  8. Return the chicken to the skillet and coat it with the sauce.
  9. Serve immediately.

Notes

  • If you do not have heavy cream, you can substitute with half-and-half or milk thickened slightly with a small amount of cornstarch mixed with water.
  • This recipe works well with a small portable electric skillet.
