Easy Chicken Stir Fry with Veggies

A quick and simple chicken stir fry loaded with fresh vegetables.

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup sliced bell peppers (any color)
  • 1/2 cup sliced onion
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tablespoon oyster sauce (optional)
  • Cooked rice, for serving

Instructions

  1. In a bowl, toss chicken pieces with soy sauce and cornstarch. Let sit for 10 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add chicken and stir-fry until browned and cooked through. Remove chicken from skillet and set aside.
  4. Add broccoli, carrots, bell peppers, and onion to the skillet. Stir-fry for 5-7 minutes, until vegetables are tender-crisp.
  5. Add minced garlic and cook for 30 seconds until fragrant.
  6. Return chicken to the skillet.
  7. In a small bowl, whisk together chicken broth and oyster sauce (if using). Pour over chicken and vegetables.
  8. Cook, stirring, until sauce thickens, about 1-2 minutes.
  9. Serve immediately over cooked rice.

Notes

  • You can substitute other vegetables like snap peas, mushrooms, or zucchini.
  • For a spicier dish, add red pepper flakes with the garlic.
