Easy Chicken Tacos

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup salsa
  • 1/4 cup sour cream or Greek yogurt

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. In a bowl, toss chicken with olive oil, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Heat a skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes.
  4. Warm tortillas according to package directions.
  5. Fill each tortilla with cooked chicken, shredded lettuce, diced tomatoes, and chopped cilantro.
  6. Top with salsa and sour cream or Greek yogurt.

Notes

  • For extra flavor, add a squeeze of lime juice to the chicken before cooking.
  • You can substitute pre-cooked rotisserie chicken for a faster meal.
