  • 1 pound boneless, skinless chicken breasts, cut into pieces
  • 12 ounces linguine pasta
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • ยผ teaspoon red pepper flakes (optional)
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • ยผ cup fresh parsley, chopped, divided
  • ยฝ cup chicken broth or reserved pasta water
  • 1 cup heavy cream
  • ยฝ cup grated parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Boil linguine according to package directions in salted water. Reserve ยฝ cup pasta water before draining. Set pasta aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Cook chicken for 5-7 minutes until browned and cooked through. Remove from skillet and set aside.
  3. Melt butter in the same skillet. Add garlic, paprika, and red pepper flakes. Sautรฉ for 1 minute until fragrant.
  4. Stir in Dijon mustard, lemon juice, lemon zest, and chicken broth (or reserved pasta water). Simmer gently, scraping browned bits from the pan.
  5. Pour in heavy cream and half the parsley. Stir gently and cook for 2 minutes until sauce thickens slightly.
  6. Return chicken to the pan. Add cooked linguine and parmesan cheese. Toss to coat, adding reserved pasta water as needed for consistency.
  7. Season with salt and pepper to taste. Garnish with remaining parsley and extra parmesan cheese. Serve immediately.
