Easy Creamy Ranch Chicken (Meal Prep)

A simple recipe for creamy ranch chicken, perfect for preparing meals ahead of time for the week.

Ingredients

  • 2 large boneless/skinless chicken breast
  • 2 teaspoons Italian seasoning
  • Salt/Pepper
  • 2 tablespoons butter, melted
  • 12 tablespoons olive oil
  • 10.5 oz. cream of chicken soup
  • 1 ½ cups milk
  • 1 cup sour cream, at room temperature
  • ½ teaspoon onion powder
  • 1 oz. packet Ranch seasoning mix

Instructions

  1. Slice the chicken into 2-3 thinner slices. Pound with a meat tenderizer if needed to aim for ½ inch thick slices.
  2. Pat the chicken completely dry and sprinkle each side with Italian seasoning and salt/pepper. Brush one side of each piece with melted butter.
  3. Heat olive oil in a large pan over medium-high heat. Sear the chicken in batches for 4-5 minutes per side until a golden brown crust develops. Remove and set aside.
  4. Add the sauce ingredients (cream of chicken soup, milk, sour cream, onion powder, and Ranch seasoning mix) to the same skillet over medium heat. Stir until combined.
  5. Let the sauce bubble gently and reduce for 5 minutes.
  6. Add the chicken back to the skillet and spoon the sauce on top.
  7. Cover the skillet partially and let the chicken heat through and absorb the flavors from the sauce for about 10 minutes.

Notes

  • Use Ranch seasoning mix, not Ranch dip mix, as they taste different.
  • Ranch seasoning adds savory flavor but does not make the sauce taste like bottled ranch dressing.
  • Crumbled bacon makes a good topping.
  • You can mix frozen vegetables into the sauce when you add the other sauce ingredients.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
