  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Smoked paprika
  • 1/2 cup Soy sauce or gluten-free tamari
  • 1/4 cup Honey
  • 2 tablespoons Dijon mustard
  • 1 cup Chicken broth or vegetable broth
  • 1 teaspoon Dried thyme or herbs
  • 1 large Onion (sliced)
  • 4 cloves Garlic (minced)
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Olive oil or vegetable oil
  • 1/4 cup Fresh parsley chopped

Instructions

  1. Pat chicken breasts dry and season with salt, pepper, and smoked paprika.
  2. Heat olive oil in a skillet over medium-high heat and sear chicken for 3 minutes per side until golden brown.
  3. Layer sliced onion and minced garlic in the crockpot.
  4. Place seared chicken on top of onions and garlic.
  5. In a bowl, whisk together chicken broth, soy sauce, honey, Dijon mustard, and thyme. Pour over chicken.
  6. Cover and cook on Low for 6-7 hours or High for 3-4 hours.
  7. Remove chicken, cover with foil, and let it rest.
  8. Whisk cornstarch with water. Add to the sauce in the crockpot and cook on High for 10-15 minutes until thickened.
  9. Return chicken to the crockpot, serve with thickened sauce, and top with fresh parsley.

  • For gluten-free option, use tamari instead of soy sauce.
