Easy Garlic Parmesan Chicken and Potatoes

A simple and flavorful recipe for baked chicken and potatoes with garlic and Parmesan cheese.

  • 4 pieces boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 lb baby potatoes, halved
  • 3 tbsp olive oil
  • 2 tsp dried Italian herbs (oregano and basil)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper, placing them in the prepared baking dish.
  3. In a bowl, mix minced garlic, olive oil, dried herbs, and grated Parmesan; drizzle over chicken.
  4. Toss baby potatoes in remaining olive oil, salt, and pepper; arrange around the chicken.
  5. Bake for 25-30 minutes or until chicken reaches an internal temperature of 165ยฐF (75ยฐC).
  6. Serve hot, drizzling any remaining sauce over the top.

Notes

  • This recipe is easily adaptable. You can add other vegetables like broccoli or asparagus during the last 15 minutes of baking.
  • For crispier potatoes, you can parboil them for 5-7 minutes before tossing with oil and seasoning.
