Easy Lemon Garlic Chicken Skillet

A simple recipe for tender chicken cooked in a bright lemon and garlic sauce in one skillet.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon dried oregano
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook for 5-7 minutes per side, until golden brown and cooked through (internal temperature reaches 165ยฐF or 74ยฐC). Remove chicken and set aside.
  4. Reduce heat to medium. Add minced garlic to the same skillet and cook for 1 minute until fragrant. Do not let it burn.
  5. Pour in chicken broth and lemon juice. Scrape up any browned bits from the bottom of the skillet.
  6. Stir in lemon zest and oregano. Bring the sauce to a simmer and cook for 2-3 minutes until slightly reduced.
  7. Return the chicken to the skillet. Spoon the sauce over the chicken.
  8. Garnish with fresh parsley before serving.

Notes

  • If you prefer a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the simmering sauce until thickened.
  • Serve this dish over rice or with steamed vegetables.
