2 pounds russet or Yukon gold potatoes, peeled and diced
1 cup shredded cheddar cheese
1 cup sour cream
1/2 cup mayonnaise
4 tablespoons butter, melted
6 slices bacon, cooked and crumbled
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
Chopped green onions or parsley for garnish (optional)
Instructions
Preheat your oven to 350°F (175°C). Lightly grease a baking dish.
Peel and dice the potatoes into evenly sized cubes.
In a large bowl, combine sour cream, mayonnaise, melted butter, minced garlic, salt, and black pepper. Stir until smooth.
Add the diced potatoes to the creamy mixture and toss to coat. Fold in most of the shredded cheddar cheese and crumbled bacon, reserving some for topping.
Transfer the potato mixture to the prepared baking dish and spread evenly. Sprinkle the remaining bacon on top.
Cover with foil and bake for 35–40 minutes, until the potatoes are tender.
Remove the foil and bake for an additional 10 minutes until the top is golden and bubbly.
Let the dish rest for a few minutes. Garnish with chopped green onions or parsley before serving.
Notes
For a richer flavor, you can add a pinch of smoked paprika to the creamy base.
Ensure potatoes are cut into uniform sizes for even cooking.
