6 slices sturdy bread (sourdough or whole grain), cubed

1 lb sausage, bacon, or plant-based meat, cooked

6 large eggs

2 cups milk (dairy or non-dairy)

1 cup shredded cheese (cheddar, mozzarella, or dairy-free)

½ tsp salt

½ tsp black pepper

Optional: diced bell peppers, spinach, mushrooms, herbs

Instructions

  • Grease a 9×13-inch casserole dish.

  • Layer cubed bread evenly in the dish.

  • Add cooked sausage (or your protein of choice) on top of the bread.

  • Sprinkle any optional veggies over the top.

  • In a large bowl, whisk eggs, milk, salt, and pepper.

  • Pour the egg mixture evenly over everything.

  • Top with shredded cheese.

  • Cover tightly with foil or plastic wrap and refrigerate overnight.

  • In the morning, uncover and bake at 350°F (175°C) for 45–55 minutes, until golden brown and set in the middle.

 

  • Cool for 10 minutes before slicing and serving.
