1 lb boneless, skinless chicken breast, cut into bite-sized pieces
4 cups fresh broccoli florets
2 tablespoons soy sauce
1 tablespoon cornstarch
1 tablespoon vegetable oil
2 cloves garlic, minced
1 teaspoon grated fresh ginger
1/4 cup water
1 tablespoon brown sugar
Instructions
In a bowl, toss the chicken pieces with soy sauce and cornstarch. Set aside for 10 minutes.
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.
Add garlic and ginger to the skillet and cook for 30 seconds until fragrant.
Add the broccoli florets to the skillet. Cook for 3-4 minutes until slightly tender.
In a small bowl, whisk together the water and brown sugar. Pour this mixture over the broccoli. Cook until the sauce thickens slightly, about 1 minute.
Return the cooked chicken to the skillet. Toss everything together until the chicken and broccoli are coated with the sauce.
Serve immediately, perhaps over rice.
Notes
For milder flavor, reduce the amount of soy sauce slightly.
If you prefer softer broccoli, steam it for 2 minutes before adding it to the stir-fry.
