  • 1 cup red lentils, soaked overnight
  • 1 cup water
  • 1/2 cup whole wheat flour
  • 1/4 cup yogurt
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp oil, plus more for cooking

Instructions

  1. Drain and rinse soaked red lentils.
  2. Blend lentils with water until smooth.
  3. In a bowl, combine lentil puree, whole wheat flour, yogurt, baking powder, and salt. Mix until well combined.
  4. Heat a lightly oiled griddle or frying pan over medium heat.
  5. Pour about 1/4 cup of batter onto the hot griddle for each pancake.
  6. Cook for 2-3 minutes per side, until golden brown and cooked through.
  7. Serve warm.
