Fudgy Flourless Greek Yogurt Brownies

  • 1 cup Greek yogurt
  • 1/2 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease and flour an 8×8 inch baking pan.
  2. In a large bowl, whisk together the Greek yogurt, cocoa powder, sugar, melted butter, eggs, and vanilla extract until smooth.
  3. In a separate bowl, whisk together the baking powder, salt, and flour.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Fold in the chocolate chips if using.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  8. Let the brownies cool completely in the pan before cutting and serving.

Notes

  • For an extra fudgy brownie, do not overbake.
  • You can add nuts or other mix-ins like chopped fruit.
  • Ensure your Greek yogurt is full-fat for the best texture.
