French Onion Potato Bake

A creamy potato bake layered with caramelized onions, a rich cream sauce, and melted Gruyère cheese. This comfort dish is perfect as a hearty side or main for any gathering.

  • 2 pounds Yukon Gold or Russet potatoes
  • 2 large yellow onions, thinly sliced
  • 3 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 teaspoon chopped fresh thyme
  • 1 cup beef broth
  • 1 cup heavy cream
  • 1 ½ cups shredded Gruyère cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. Melt butter in a large skillet over medium heat. Add onions and a pinch of salt. Cook for 30–40 minutes until deeply golden and caramelized.
  3. Peel and slice potatoes into ¼-inch thick rounds.
  4. In a bowl, whisk together beef broth, heavy cream, garlic, thyme, salt, and pepper.
  5. Layer half of the potatoes in the baking dish, followed by half of the onions, half of the cheese, and half of the cream mixture. Repeat layers.
  6. Cover with foil and bake for 35 minutes. Remove foil and bake for an additional 20–25 minutes until golden and bubbling.
  7. Let rest for 10 minutes before serving.

Notes

  • Caramelize onions slowly for rich flavor.
  • Resting the bake before serving helps the layers hold together.
  • Substitute Gruyère with Swiss or cheddar cheese if desired.
