Garlic Butter Chicken Thighs

Juicy and flavorful chicken thighs cooked in a rich garlic butter sauce.

  • 1.5 lbs boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup unsalted butter
  • 1/4 cup chicken broth
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Pat the chicken thighs dry with paper towels. Season generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear the chicken thighs for 3-4 minutes per side, until browned. Remove chicken from the skillet and set aside.
  4. Reduce heat to medium. Add minced garlic to the skillet and cook until fragrant, about 1 minute.
  5. Add butter to the skillet and melt. Stir in chicken broth, lemon juice, and oregano.
  6. Bring the sauce to a simmer. Return the chicken thighs to the skillet, nestling them into the sauce.
  7. Cover the skillet and simmer for 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  8. Baste the chicken with the sauce occasionally.
  9. Garnish with fresh parsley before serving.

Notes

  • Serve with rice, pasta, or your favorite vegetables.
  • For extra flavor, you can add a pinch of red pepper flakes to the sauce.
