Garlic Butter Chicken and Veggies

A simple and flavorful dish featuring chicken, garlic, butter, and your favorite vegetables.

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter
  • 6 cloves garlic, minced
  • 1 lb mixed vegetables (broccoli florets, bell pepper strips, onion wedges, zucchini slices)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chicken broth
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a large bowl, toss chicken pieces with olive oil, salt, and pepper.
  2. Melt butter in a large skillet or Dutch oven over medium-high heat.
  3. Add chicken to the skillet and cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
  4. Add minced garlic to the skillet and cook until fragrant, about 1 minute.
  5. Add mixed vegetables to the skillet and cook until tender-crisp, about 5-7 minutes.
  6. Return chicken to the skillet. Pour in chicken broth and stir to combine.
  7. Bring to a simmer and cook for 5-10 minutes, or until chicken is cooked through and sauce has thickened slightly.
  8. Stir in fresh parsley before serving.

Notes

  • You can use any vegetables you prefer, such as carrots, asparagus, or mushrooms.
  • For a spicier kick, add a pinch of red pepper flakes with the garlic.
  • Serve over rice or with crusty bread.
