Garlic Butter Pasta with Parmesan and Herbs

A simple and flavorful pasta dish featuring fresh herbs, garlic, butter, and Parmesan cheese.

  • 14 oz (400g) long pasta, such as spaghetti or linguine
  • 2 cups (40g) fresh basil
  • 2 tbsp fresh chives
  • 1 cup fresh parsley
  • 1 tbsp fresh thyme
  • 1 tbsp fresh lemon thyme
  • 2 tbsp fresh mint
  • 1 tbsp fresh oregano
  • 1 tbsp fresh sage
  • 2 tbsp (30g) Butter
  • 2 cloves garlic, finely chopped
  • 4 tbsp Pecorino, freshly grated
  • 3 tbsp Olive oil
  • Zest and juice of half a lemon
  • Salt and pepper
  • 1/3 cup (80ml) reserved pasta water

Instructions

  1. Cook pasta according to package directions until al dente. Reserve about 1/3 cup of pasta water before draining.
  2. While pasta cooks, melt butter with olive oil in a large skillet over medium heat.
  3. Add chopped garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
  4. Add the chopped fresh herbs, lemon zest, and lemon juice to the skillet. Stir to combine.
  5. Add the drained pasta to the skillet with the herb and garlic mixture.
  6. Add the grated Pecorino cheese and toss to coat.
  7. Gradually add the reserved pasta water, a tablespoon at a time, tossing until a light sauce forms and coats the pasta.
  8. Season with salt and pepper to taste.
  9. Serve immediately.

Notes

  • Use fresh herbs for the best flavor; dried herbs will not yield the same result.
  • Do not overcook the pasta; aim for al dente.
  • Cook garlic gently to avoid bitterness.
  • Extra virgin olive oil is recommended.
