Garlic Butter Pasta with Parmesan and Herbs

- 14 oz (400g) long pasta, such as spaghetti or linguine
- 2 cups (40g) fresh basil
- 2 tbsp fresh chives
- 1 cup fresh parsley
- 1 tbsp fresh thyme
- 1 tbsp fresh lemon thyme
- 2 tbsp fresh mint
- 1 tbsp fresh oregano
- 1 tbsp fresh sage
- 2 tbsp (30g) Butter
- 2 cloves garlic, finely chopped
- 4 tbsp Pecorino, freshly grated
- 3 tbsp Olive oil
- Zest and juice of half a lemon
- Salt and pepper
- 1/3 cup (80ml) reserved pasta water
- Cook pasta according to package directions until al dente. Reserve about 1/3 cup of pasta water before draining.
- While pasta cooks, melt butter with olive oil in a large skillet over medium heat.
- Add chopped garlic and cook for 1-2 minutes until fragrant, being careful not to burn it.
- Add the chopped fresh herbs, lemon zest, and lemon juice to the skillet. Stir to combine.
- Add the drained pasta to the skillet with the herb and garlic mixture.
- Add the grated Pecorino cheese and toss to coat.
- Gradually add the reserved pasta water, a tablespoon at a time, tossing until a light sauce forms and coats the pasta.
- Season with salt and pepper to taste.
- Serve immediately.
Notes
- Use fresh herbs for the best flavor; dried herbs will not yield the same result.
- Do not overcook the pasta; aim for al dente.
- Cook garlic gently to avoid bitterness.
- Extra virgin olive oil is recommended.
