Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC).
  2. Toss the cubed sweet potatoes with a drizzle of olive oil, salt, and pepper on a baking sheet.
  3. Roast for 20-25 minutes, or until tender and lightly browned.
  4. While the potatoes are roasting, melt the butter in a small saucepan over medium heat.
  5. Add the minced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  6. Remove from heat and stir in the chopped parsley.
  7. Once the sweet potatoes are roasted, pour the garlic butter sauce over them and toss to coat.
  8. Serve immediately.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes to the garlic butter.
  • You can substitute olive oil for butter for a dairy-free option.
