Garlic Herb Potato Soup

Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 6 cups potatoes, peeled and cubed
  • 4 cups chicken or vegetable broth
  • 2 cups milk
  • 1/2 cup heavy cream
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add minced garlic and cook for 1 minute more until fragrant.
  3. Add cubed potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Carefully transfer the soup to a blender or use an immersion blender to puree until smooth.
  5. Return the pureed soup to the pot. Stir in milk and heavy cream. Heat gently over low heat, do not boil.
  6. Stir in fresh parsley and chives. Season with salt and pepper to taste.
  7. Serve hot.

Notes

  • For a thicker soup, use fewer potatoes or add a cornstarch slurry.
  • Garnish with extra herbs or a swirl of cream before serving.
