  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 0.5 teaspoon freshly ground black pepper
  • 2 tablespoons finely chopped fresh parsley
  • 2 cloves garlic minced

Instructions

  1. Preheat your oven to 400ยฐF (200ยฐC) and line a large baking sheet with parchment paper.
  2. Scrub the baby potatoes and pat them completely dry.
  3. In a large bowl, toss the potatoes with olive oil, salt, and pepper until evenly coated.
  4. Spread the potatoes in a single layer on the baking sheet.
  5. Roast for 25 to 30 minutes, shaking the pan halfway, until golden brown and crispy.
  6. While potatoes roast, combine parsley and minced garlic in a small bowl.
  7. Transfer roasted potatoes to the bowl, sprinkle with garlic and parsley mixture, and toss to coat.
