A simple recipe for chicken and potatoes cooked together on one pan with garlic and Parmesan cheese.

Ingredients

Scale
  • 1.5 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1.5 lb Yukon Gold potatoes, quartered
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 4 cloves garlic, minced
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. In a large bowl, toss the potatoes with 1 tablespoon of olive oil, salt, pepper, and Italian seasoning.
  3. Spread the seasoned potatoes in a single layer on a large baking sheet.
  4. Roast the potatoes for 15 minutes.
  5. While potatoes roast, toss the chicken pieces with the remaining 1 tablespoon of olive oil and minced garlic.
  6. Remove the baking sheet from the oven. Push the potatoes to one side of the pan.
  7. Add the seasoned chicken to the empty side of the baking sheet.
  8. Return the pan to the oven and roast for another 15 minutes.
  9. Sprinkle the Parmesan cheese evenly over the chicken and potatoes.
  10. Continue baking for 5 to 10 minutes, or until the chicken is cooked through and the cheese is melted and lightly golden.
  11. Remove from the oven, sprinkle with fresh parsley, and serve immediately.

Notes

  • For crispier potatoes, ensure they are in a single layer and not overcrowded on the pan.
  • You can substitute chicken thighs for breasts if you prefer.
  • Use freshly grated Parmesan cheese for the best flavor.
