1 lb chicken breast, cut into bite-sized pieces
8 oz pasta, cooked according to package directions
2 tbsp olive oil
4 cloves garlic, minced
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 cup chicken broth
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Instructions
Cook pasta according to package directions. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
Add minced garlic to the skillet and cook for about 30 seconds until fragrant.
Pour in heavy cream and chicken broth. Bring to a simmer, stirring constantly.
Stir in Parmesan cheese until melted and the sauce thickens.
Return chicken to the skillet. Add cooked pasta and toss to coat.
Season with salt and pepper to taste.
Garnish with fresh parsley before serving.
Notes
For a creamier sauce, add a little more heavy cream.
You can add vegetables like broccoli or spinach to this dish.
