Garlic Shrimp with Broccoli

  • 1 pound large shrimp, peeled and deveined
  • 1 head broccoli, cut into florets
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch
  • 1/4 cup water
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together soy sauce, cornstarch, and water. Set aside.
  2. Heat olive oil in a large skillet or wok over medium-high heat.
  3. Add minced garlic and cook until fragrant, about 30 seconds.
  4. Add shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  5. Add broccoli florets to the skillet and stir-fry for 3-5 minutes, until tender-crisp. Add a splash of water if needed to steam the broccoli.
  6. Return the shrimp to the skillet.
  7. Pour the soy sauce mixture over the shrimp and broccoli. Stir constantly until the sauce thickens, about 1-2 minutes.
  8. Season with salt and pepper to taste.
  9. Serve immediately.

Notes

  • For extra flavor, you can add a pinch of red pepper flakes with the garlic.
  • Serve over rice or noodles for a complete meal.
