Greek Chicken Meal Prep

Prepare healthy Greek chicken for your week.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt to taste
  • Black pepper to taste
  • 1 lemon, juiced

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine olive oil, oregano, thyme, garlic powder, onion powder, salt, pepper, and lemon juice.
  3. Add chicken breasts to the bowl and toss to coat evenly.
  4. Place chicken on a baking sheet lined with parchment paper.
  5. Bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  6. Let the chicken rest for 5 minutes before slicing or dicing.
  7. Portion the chicken into meal prep containers.

Notes

  • Serve with your favorite sides like quinoa, rice, or a Greek salad.
  • Store in airtight containers in the refrigerator for up to 4 days.
