Grilled Chicken and Sweet Potato

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 large sweet potato
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Cut the sweet potato into wedges. Toss with 1 tablespoon of olive oil, paprika, salt, and pepper.
  3. Place sweet potato wedges on the grill and cook for 15-20 minutes, turning occasionally, until tender and slightly charred.
  4. While the sweet potatoes cook, season the chicken breasts with salt, pepper, and garlic powder.
  5. Brush the chicken breasts with the remaining 1 tablespoon of olive oil.
  6. Grill the chicken breasts for 6-8 minutes per side, or until cooked through and no pink remains in the center.
  7. Serve the grilled chicken with the roasted sweet potato wedges.

Notes

  • You can marinate the chicken for 30 minutes before grilling for extra flavor.
