Grilled Zucchini Chickpea Salad

Ingredients

  • 2 medium zucchinis, sliced
  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh mint
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Grill zucchini slices for 3-4 minutes per side, until tender and grill marks appear.
  3. In a large bowl, combine grilled zucchini, chickpeas, parsley, and mint.
  4. In a small bowl, whisk together olive oil, lemon juice, and minced garlic.
  5. Pour dressing over the zucchini and chickpea mixture.
  6. Season with salt and pepper. Toss gently to combine.
  7. Serve immediately or chill for later.

Notes

  • You can add other vegetables like bell peppers or red onion.
  • For a creamier dressing, add a tablespoon of tahini.
