A hearty, healthy one-pan meal featuring lean ground beef, sweet potatoes, and zucchini, perfectly seasoned for a comforting and quick weeknight dinner.

Ingredients

  • 1 lb ground beef (85/15 lean)

  • 2 medium zucchini, sliced

  • 2 medium sweet potatoes, peeled and cubed

  • 1 small yellow onion, diced

  • 2 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tsp smoked paprika

  • 1 tsp Italian seasoning

  • ½ tsp salt (adjust to taste)

  • ½ tsp black pepper

  • 2 tbsp fresh parsley (for garnish)

Optional Add-Ins:

  • ½ cup chopped red bell pepper

  • ¼ tsp chili flakes or cumin for spice

  • ½ cup shredded cheese (cheddar or mozzarella)

Instructions

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat.

  • Add ground beef and cook until browned, about 7–10 minutes. Drain excess fat and set aside.

  • Add remaining olive oil, sauté onions for 2 minutes, then stir in sweet potatoes.

  • Cook sweet potatoes for 5–7 minutes, stirring occasionally.

  • Add zucchini and garlic, cooking for an additional 3–4 minutes.

  • Return ground beef to skillet. Add smoked paprika, Italian seasoning, salt, and pepper.

  • Stir everything together and cook for 3–5 minutes to combine flavors.

 

  • Garnish with fresh parsley and serve hot.
