1 lb ground beef (85/15 lean)
2 medium zucchini, sliced
2 medium sweet potatoes, peeled and cubed
1 small yellow onion, diced
2 cloves garlic, minced
2 tbsp olive oil
1 tsp smoked paprika
1 tsp Italian seasoning
½ tsp salt (adjust to taste)
½ tsp black pepper
2 tbsp fresh parsley (for garnish)
Optional Add-Ins:
½ cup chopped red bell pepper
¼ tsp chili flakes or cumin for spice
½ cup shredded cheese (cheddar or mozzarella)
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Add ground beef and cook until browned, about 7–10 minutes. Drain excess fat and set aside.
Add remaining olive oil, sauté onions for 2 minutes, then stir in sweet potatoes.
Cook sweet potatoes for 5–7 minutes, stirring occasionally.
Add zucchini and garlic, cooking for an additional 3–4 minutes.
Return ground beef to skillet. Add smoked paprika, Italian seasoning, salt, and pepper.
Stir everything together and cook for 3–5 minutes to combine flavors.
Garnish with fresh parsley and serve hot.
